Winemaking
Spontaneous alcoholic fermentation with indigenous yeasts. Aged for 20 months in 2.500 liter foudres and 450 liter French oak barrels.
Description
The Château de Pibarnon wine is a red wine made from the Mourvèdre grape variety, complemented with a percentage of Garnacha Tinta. It is defined as powerful, but at the same time fine and elegant, as the presence of tannins in its flavour denotes its potential.
It is an example of broad flavours, with a high percentage of minerals that let you know that the fruit has been cultivated in lands close to the Mediterranean and that it is the product of artisanal techniques that denote the quality and exclusivity of the same.
Elaboration
The Château de Pibarnon wine is made by planting the Mourvèdre and Garnacha Tinta fruit, applying certified organic techniques that respect the environment and even nurture the planting of other green species.
During the harvesting process, they ensure that each bunch is in an optimum state of ripeness, applying traditional techniques to protect and preserve the grapes.
Of course, the intervention of chemicals is nil, so the fermentation process is carried out with indigenous yeasts and leaving the must to macerate with its skins for a period of 21 days in oak barrels.
The ageing is carried out alternating new and old barrels made of the same material, for a period of approximately 8 to 10 months.
Taste
The Château de Pibarnon wine is balanced between fruity and spicy tones, with a concentrated and warm flavour. It has a peculiar aroma of red fruits and its texture is dense and structured. It also has a long and delicious finish on the palate.
A wine with body and subtlety
The Château de Pibarnon wine is defined by the tasters as an imposing, full-bodied wine, but at the same time it denotes subtlety in taste. It is ideal to enjoy with game, pasta and red meat dishes.
