A red sold in one-liter bottles, the 2021 Novetat Total was produced with 90% Callet and 10% Mantonegro from young (15 years old) vines on call vermell red soils in the zone of Felanitx and Consell. It fermented by plot with different percentages of full clusters and matured for six months with the full lees. It reminds me of a juicy País from Chile, full of berries and herbs, with a moderate 12.5% alcohol and a light and fresh palate, pleasant and easy to drink. It was bottled without any added sulfites. 6,000 bottles produced.
