Description
The red wine La Santa de Úrsula from the Envínate winery is a wine made from Listán Negro, Listán Blanco and Negramoll grapes from vineyards planted in the village of Santa Úrsula, in Tacoronte – Acentejo in the Canary Islands.
This wine is the product of work in vineyards located at 350 and 600 metres above sea level. This grape is characterised by its resistance, vigour and rustic character. The characteristic tonality of this type of grape, where a shade between blue and black is denoted, provides the colour that distinguishes the wine La Santa de Úrsula de Envínate.
Winemaking
The production process is carried out in individual plots, separately. Most of the grapes used are macerated whole, even this percentage is between 50 and 75%. Of these, 20% are treated with carbonic maceration and alcoholic fermentation with the fruit’s own yeasts. This process is carried out in cement tanks.
The ageing is carried out in 228-litre French oak barrels for a period of 8 months. One of the particularities of this wine is that the harvesting of the fruit is completely organic, that is to say, no pesticides or herbicides are used. The bottling process is carried out without having previously clarified or filtered the wine.
Taste
La Santa de Úrsula is a red wine characterised by its fruity aroma and flavour, where berries predominate with hints of citrus, although spices are also included in its flavour and aroma.
It is a refreshing wine with only 12% alcoholic content, which also includes fine, ripe tannins that are responsible for providing the perfect balance in its flavour.
An exclusive wine that denotes exclusivity in its taste.
La Santa de Úrsula is synonymous with exclusivity, as its production is very limited. Moreover, it has been awarded 95 points by the wine critic Luis Gutiérrez, from The Wine Advocate magazine. This wine is perfect for pairing with white meats and fish.
