The 2019 Escondite del Ardacho Las Guillermas comes from two plots, 0.4 hectares of Tempranillo on gravel soils and 0.22 hectares of white Viura on white marl soils, all harvested and fermented together with full clusters. This is the warmest plot that produces more Mediterranean and juicy wines, especially in a vintage like 2019, but the wine keeps very good acidity. For Oliván, the co-fermentation works very well, but you have to work in the vineyard to be able to harvest the grapes at the same time and here the acidity comes mostly from the Viura, which lightens the Tempranillo that in that part of the village gets quite ripe. The fruit is black and the tannins abundant and chalky. A powerful red that filled 1,625 bottles in July 2020. The prices are set proportional to the cost of working the vineyard, to make Tempranillo and Viura ripen at the same time.
